Abstract
Midin (Stenochlaena palustris), a native fern widely found in Borneo, particularly in Sarawak, Malaysia, remains underutilized despite its potential for food applications. This study examines the sensory profile of midin nori snacks and evaluates consumer purchase intention. Four formulations were developed with varying midin (100 g, 95 g, 90 g, 85 g) and tapioca starch (0 g, 5 g, 10 g, 15 g) content. Sensory attributes, including appearance, colour, aroma, crispiness, flavour, and overall acceptability, were assessed using a 9-point hedonic scale by 30 untrained panellists. A purchase intention survey followed the sensory evaluation. Findings revealed significant differences (p < 0.05) in colour, crispiness, flavour, and purchase intention among formulations with tapioca starch compared to the control. However, appearance and aroma remained consistent across all samples (p > 0.05). The study highlights the potential of midin nori snacks as an innovative product, supporting the incorporation of indigenous ingredients into the food industry.
